Rosie's Guacamole
Serve as an appetizer with your favorite chips or vegetables, delicious spread for sandwiches, or topping for any taco.
Ingredients
For 8 servings | 30 min | Simple
4 Ripe Avocados
4 oz Red Onion, diced (roughly 1 small or ½ large red onion)
1-2 Jalapenos, seeds removed and finely diced
0.5 oz Cilantro, Chopped (roughly ½ bunch, leaves only)
4 oz Lime Juice (2-3 limes worth of juice)
8 oz Roma Plum Tomato, Diced
0.3 oz Garlic, Chopped Finely
0.3 oz Kosher Salt
10 Grinds of Black Pepper


COOKING
1. Cut Avocados in half, remove the seed and using a large spoon remove the flesh from the skin. Once removed cut the avocado into large chunks and add to a bowl.
2. Depending on your desired spice level use 1-2 jalapeño and the more spicy you want the more of the seeds you can chop up with the peppers. Add the remaining ingredients with the avocado and mix/lightly smash until you achieve your desired consistency.
3. The key to any great guacamole is enough lime juice!
